Welcome. Starting from the very beginning is never a bad idea. Even seasoned players can usually find something useful in that process. Rebuilding from major loss, mental or physical, requires going back to basics and rebuilding from the ground up. BEST OF LUCK, and by all means ask all the questions you come up with.

I'm really sorry to hear that happened to you - rebuilding can seem like a mountain task, but you've got the advantage of a blank canvas 👌

I'd say it's best to start with small goals in your playing. Try and work out exactly what you remember and what you've forgotten and go from there.
It could be as simple as relearning some chords or working on a technique that you enjoy - make sure it's nothing but enjoyable, as right now you're mental health is the most important thing, so you don't want to be frustrated or expecting too much out of starting back - especially after undergoing such an ordeal.

The main thing is that you've got the drive to get back to where you were with your playing, and that'll get you back there in no time 😊

Best of luck and take care 🤟
